It's not exactly a scientific study but Some of the most common problems with the places he visits are the food isn't fresh (this is by far the number one reason. Literally everywhere he goes they don't cook food fresh) closely followed by the menus are too big. He always tells them to choose a style and do it well. Originally, I was worried once people worked their way through the menu they wouldn’t return and the place wouldn’t survive. If you have 100 dishes in 10 different styles on your menu then the amount of fresh ingredients you'd have to have every day would mean it would be impossible to cook everything fresh (and you'd waste ingredients for dishes you didn't make). We were on a cycling holiday, and rocked up at about 1.30 pm, by which time the locals had eaten everything and left. The lady that ran it went into an apologetic flap, and said she'd try and rustle something up if we didn't mind taking pot luck. We ended up with rillette (pork pate) and bread as a starter, pork chops, chips and green beans as a main, some camembert and fresh peaches for afters. It was all **** ing delicious. A carafe of local wine that kept getting replenished as soon as we got halfway down it. I think the whole thing came to about a fiver a head. And she kept apologising for it being an improvisation, and how if she'd known we were coming she'd have cooked us a proper meal. Magical.
