I say "proper", it should be a veal escalope but it's commonplace for the veal to be swapped out for pork, in which case it's Schnitzel Wiener Art as opposed to Wiener Schnitzel. It's still nice, but not as good as with the veal - served dry with a lemon slice or with Zigeuner sauce - alongside a ****-tonne of chips covered in paprika. My reciepe (although not German in any way shape or form) 3x bottles of red 1x bottle of vermouth 1x35cl of brandy ground nutmeg. (couple of pinches) cinnamon sticks (5-6) handful of cloves 5-6 oranges peeled and segmented. Cut the segments in half. the orange peel. All in a pan. Simmer for ages. Bottle in the ones you have emptied. Drink within 6 weeks because it continues to ferment and has exploded all over my kitchen in the past.
